Contrast between the sky and the stars is better with my 10 x 50’s. Quality of coatings is likely better. In today’s prices, these would be $500 binoculars. The Scenix 7 x 50’s are a good value for the money however. I bought mine on a sale I believe for about $85.

The sky is “darker” in 10 x 50’s than in 7 x 50’s. On the other hand the view is less shaky in the 7 x 50’s. I also have 15 x 70’s. These however have be mounted on either a tripod or at the minimum a monopod. The more power, the more shake. If you are going to hand hold your binoculars, the 7 x 50’s are better even although they don’t darken the sky as much as do 10 x 50. Note however that my 10 x 50’s are Celestron Novas. My 7 x 50 are Orion Scenics. The 15 x 70’s are from “Big Binoculars.com”. I have also used 7 x 35’s, 6 x 30’s.8 x 40’s, 6.5 x 21 (Pentax Papillo). The last is extremely sharp, but doesn’t do much so far as stellar observing is concerned. If you can afford it, buy the best 10 x 50’s you can get along with a monopod for support.
